Sémillon, Sauvignon – grown on gravelly clay soils
VINIFICATION:

Fermentation in temperature-controlled stainless-steel vats
Maturation in cement vats
Aged for 6 to 18 months in oak barrels
HARVEST:
Hand-picked in 3 to 6 successive selections (tries)
TASTING:
Brilliant golden yellow with copper highlights.
A subtle nose of candied orange peel.
Rich and well-balanced on the palate, marked by flavours of orange marmalade and gingerbread, leading to a finish reminiscent of tangy confectionery.
ACCOMPANIEMENT:
Serve at 8°C.
Particularly enjoyable with roast chicken, bitter chocolate tart, or gorgonzola puff pastry.

Merlot, Cabernet Sauvignon, Cabernet Franc on clay-silt soil.
VINIFICATION:
Fermentation in temperature-controlled stainless-steel vats
HARVEST:
Hand-picked
TASTING:
Deep purple colour with tile-red reflections.
A nose of leather, prune, and blond tobacco.
Supple and rounded on the palate, marked by stewed fruit and spice, with soft, well-integrated tannins.
ACCOMPANIEMENT:
Serve between 16°C and 18°C.
Pairs beautifully with slow-cooked lamb shank, Provençal stew, or a mushroom gratin.
Allow to breathe for at least one hour before tasting, or decant.
Air for at least one hour before tasting or decanting.
Good wine for laying down (6 to 7 years), but can be enjoyed now.
